Lime-Glazed Chewy Coconut Cookie Crisps

When I am making cookies to share, I usually try to pair them up so people have a choice. I look for flavors that complement and coordinate.  Because the Lime Slice Cookies were so zesty and tangy, I wanted something sweet, but still limey, to go alongside.  Lime and coconut are always a delicious match! Put the lime in the coconut!

Chewy Coconut Cookie Crisps
1        cup all-purpose flour
Lime-Glazed Chewy Coconut Cookie Crisps
(alongside Lime Slice Cookies)
½       teaspoon baking powder
½       teaspoon baking powder
          pinch of salt
½       cup softened butter
½       cup granulated sugar
½       cup brown sugar
1        large egg
1        teaspoon vanilla
1 ½    cups flaked coconut
Lime Glaze
½       lb confectioner’s sugar
2        tablespoons softened butter
2        tablespoons lime juice
1        teaspoon lime zest

For cookies:
Preheat oven to 350 degrees.
In a large bowl, sift together flour, baking soda, and a pinch of salt.
In a separate bowl, cream together softened butter and granulated and brown sugars.  Beat in egg and vanilla.  Mix flour and butter mixtures, then stir in coconut.  Drop by teaspoonfuls onto ungreased cookie sheet and bake for 8-10 minutes, until cookies are light brown and edges are toasted.  Move cookies to cooling rack and drizzle with glaze while still warm.
For Glaze:
Mix together confectioner’s sugar and butter.  Add lime zest and lime juice and mix until well combined (glaze should be thin).
