Cookie Dreams

Have you ever woken up and realized that you've had a creative epiphany while dreaming? Well, that's exactly what happened to me one day, not too long ago.  As I opened my eyes, I thought to myself, "I think I could make cookies that taste and look like limes." I could see it!  Here is the sugar cookie variation that resulted...

Lime Slice Cookies
Lime Slice Sugar Cookies
For cookies:
   cup butter
2     cups all-purpose flour
1     egg
¾    cup sugar
1     tablespoon lime juice
1     teaspoon vanilla
1     teaspoon lime zest
       Dash salt



Zesty Lime Icing
1½   lb confectioner's sugar
    cup butter
3      tablespoons lime juice
1      teaspoon lime zest (optional)
        Frosting tints and sprinkles 
        (as desired)

Preheat oven 350 degrees.  Beat butter with electric mixer on medium to high speed for 30 seconds. Add about half the flour, the egg, sugar, lime juice, baking powder, vanilla, and salt.  Beat till thoroughly combined.  Beat in remaining flour.  Divide dough in half.  Cover; chill for 3 hours.
     On a lightly floured surface, roll half the dough at a time 1/8 to 1/4 inch thickness.  Cut into circles, then cut circles in half.  Place on an ungreased baking sheet. Bake in a 350 degree oven for 5-7 minutes, until edges are firm and bottoms are lightly browned.  Cool cookies on a rack.
     For frosting, beat softened butter with electric mixer on medium to high speed for 1-2 minutes, until fluffy.  Add confectioner's sugar and about half of the lime juice.  Mix until thoroughly combined and fluffy, then add in remaining juice (and tints, if desired) and zest.
     Frost cookies with the zesty lime icing, then sprinkle with colored sprinkles to resemble real lime slices.

A variation
For a variation on these zesty citrus cookies, substitute lemon for the juice and the zest throughout the recipe.

My Mom's Delectable Sugar Cookies

This is the recipe my mom always used. The cookies come out soft and delicious, the perfect decorating cookie for any occasion! Gingerbread Cutout Cookies

Make snappy ginger folk or ginger critters with this soft, spicy, and delicious recipe.  It is, by far, my favorite recipe to make during the holidays.  The creative possibilities are endless ! Classic Gingerbread Man Ingredients ½          cup shortening 2 ½       cups all-purpose flour ½          cup white sugar ½          cup molasses 1           egg 2           teaspoons ginger 1           tablespoon vinegar 1           teaspoon baking powder 1           teaspoon cinnamon ½          teaspoon cloves ½          teaspoon baking soda Directions In a mixing bowl, beat shortening with an electric mixer on medium to high speed for 30 seconds.  Add about half the flour, the sugar, molasses, egg, ginger, vinegar, baking powder, cinnamon, cloves, and baking soda.  Beat until thoroughly combined, and then beat in remaining flour.  Cover and chill for 3 hours or until dough is easy to handle.
